The Sourdough (Benita)

With thirty-plus years of baking, some years with more intense baking than others, when the pandemic hit, I ran out of powder yeast. There was no store with yeast, so I remembered what I learned all those decades ago in Sweden: I created my own sourdough starter. A sourdough starter in many countries has a name. Why? Because it is a living being, it is natural yeast created by mixing water with flour and giving it time to ferment, just like wine that ferments with natural yeasts from the grapes. Thus, my sourdough starter got Benita for name.
