The Baker
Demian was born and raised in Mexico City. Electromechanical Engineer from Mexico’s National University (UNAM). In 2010 he and his family came to Canada as permanent residents and in 2015 became Canadian citizens. He has been working on electrical trains for a German company in Oakville.
Thanks to his Swedish background (his second last name is Swedish), he got a scholarship and lived and studied in Uppsala, Sweden, where he was forced to take one subject against his will: Baking. After some theoretical lessons about baking, it was time to get hands on the dough. Once he touched it and started to knead, the magical moment turned into an epiphany inside him and from there he has baked longer than half of his life.
He has been on a baking learning quest since then, but sourdough has been a long process taking patience and tons of trial-and-error to fine-tune his breads. Sourdough can go wrong even for professional bakers, but that has never discouraged him, on the contrary, it makes him seek the root reason, test again and improve.
